Treat Yourself With These Gooey Triple Chocolate Muffins

Today we are learning how to make Gooey Triple Chocolate Muffins.

The Chocolate Ganache

For the chocolate ganache, we are going to need 250 gr of milk chocolate and 150 gr of dark chocolate and 480 ml of double cream. Bring the double cream to a boil and pour it over the chocolate. Let it cool for four hours.

Next, scoop out full teaspoons of ganache and place them on a baking tray lined with parchment paper.

treat 1Freeze for 30 minutes.

The Muffin Batter

113 gr of unsalted butter (melted)

100 gr light brown sugar

50 gr caster sugar

2 large eggs

240 ml milk

4 tbsp vegetable oil

150 gr dark chocolate (melted)

1 tbsp vanilla extract

200 gr self-raising flour

3 tbsp cocoa powder

65 gr of white chocolate

65 gr of milk chocolate

65 gr of dark chocolate

Whisk the eggs and add the butter, the oil, the milk and the vanilla. Whisk some more. Add the melted chocolate.

treat 2Whisk some more. You are going to get a brownish mixture in which you will add both the light brown sugar and the castor sugar. Continue whisking. Then the mixture will become a little more dense. Then, sieve 150 gr of the flour along with the cocoa powder.

treat 3Start folding with a plastic spatula. Roughly chop the chocolate. Mix it together with the remaining flour.

treat 4Add everything to the batter. Continue folding with the same spatula. Now, you are going to get a mixture, from which, I swear, dreams are made of!

Lastly, remove the truffles from the freezer.

Spoon half of the batter into muffin cases and add the truffles. Cover them with the remaining batter.

treat 5Bake them on 180 Celsius degrees  for 15 to 20 minutes.

treat 6The Chocolate Bark

300 gr white chocolate

50 gr milk chocolate

50 gr dark chocolate

Mix them all on a parchment paper. When you look at the mixture it should look like a Jackson Pollock painting.

treat 7Leave them to dry and once they are ready, crush them into pieces.

Microwave the remaining ganache until lukewarm and whip. Pipe the ganache and add the chocolate barks on top.

treat 8You are supposed to get 12 muffins with these ingredients. They should also look picture perfect!
