You said what? Watermelon?
Yes guys, today we are making a very colorful, yummy TRIPLE cake so there will be plenty for you to eat. It’s a no bake Melon cake made out of three different kinds of melons- watermelon, honeydew melon and cantaloupe.
This is a healthy and fresh cake that is easily put together at any time of the year. Yay!
One of our all-time favorite YouTube channels, Cookies Cupcakes and Cardio shares with us this recipe you will be able to do yourself. It’s not very hard to do if you follow the instructions and do exactly what they do on screen.
Let’s get started!
What you need:
- 1 Watermelon
- 1 Cantaloupe
- 1 Honeydew
- 2 cups whipped cream
- ¼ cup icing sugar
- 1 teaspoon vanilla extract
- Fresh fruit for garnish (strawberries, raspberries, blackberries, kiwis etc)
How to do it:
Cut 1 ½” thick, round slices where the melons are widest (these will be the layers of the cake): two from the watermelon, and one from each of the cantaloupe and honeydew. Trim rind with a sharp knife and punch out seeds with a 2 ¾” round cutter.
Using the excess watermelon pieces, cut two additional watermelon layers (2¾”) to fill the holes left in the center of the cantaloupe and honeydew layers.
Then, you start preparing whipped cream by placing cream in the bowl of a stand mixer fitted with the whisk attachment, and whip on high speed until soft peaks form.
Once the cream has thickened, add the icing sugar and vanilla extract, and continue to whip until stiff peaks form. Place one watermelon layer onto a plate, or cake board, and cover with whipped cream.
Add the cantaloupe (or honeydew) layer next, and then place the honeydew (or cantaloupe) layer afterwards and cover with whipped cream. Finally, top with second watermelon layer, and cover the entire cake with whipped cream.
Apply a border of fresh fruit along the bottom of the cake base and pile fresh fruit on top of cake.
